2 vineyards, one in Polish Hill River and other in Watervale (just north of the township). Fruit picked (it helps to get it from the vineyard this way), destemmed and crushed before pressing. Juice was fermented cool [as a cucumber], arrested with a meager 8g/l of sugar...
